Five truffle food recipes

This week we bring you five truffle food recipes by gastro.24sata.hr, that anyone can prepare. In one of our previous articles, we wrote about Motovun. This city is located in central Istria which is very famous for truffles. In this area, you can buy truffles in many places. There is also the truffles festival that takes place in autumn.

Truffles are rare, expensive, and true aphrodisiac

Yes, they are all that. Did you know that they also come as white and black truffles? In summer you can find both, while winter is more common for black and spring for the white one. If you buy the fresh one, be sure to use it as soon as possible. If you have to keep it for some days, the best would be to put it in rice or something similar. Truffles are very delicate and too much of moisture can ruin them. So without further ado, get hold of some truffles, and let´s go to our five truffle food recipes.

Toasted truffles bread

This one is very simple but also very tasty. It is enough to bake bread in a toaster and put some quality butter on it. As a last step grate some black truffle on top to give it a complete taste sensation. With that, we also suggest a bottle of quality wine.

Pizza

A fresh and light would be description of this delicious pizza without tomato sauce. Other ingredients are mozzarella,cottage cheese, fresh arugula and grated black truffle.

Preparation time of this amazing pizza is up to 30 min. It should be enough for 4 servings and it is very easy to prepare.

Pizza dough:

  • 500 g smooth flour
  • 10 g of fresh yeast
  • salt
  • olive oil

Stuffing

  • 200 g mozzarella
  • 100 g arugula
  • 100 g cottage cheese
  • black truffle Preparation

Preparation

  1. Prepare the pizza dough by sifting the flour. Salt it.
  2. Stir the yeast into a little lukewarm water to activate. Mix the yeast into the flour and make an elastic dough. Cover with plastic wrap to keep it warm and let it stand for at least half an hour.
  3. Knead the dough. Roll out and shape the pizza bases on a floured surface. Coat the edges of the pizza with a little olive oil to keep it elastic.
  4. Prepare the pizza filling by draining the mozzarella and slicing it. Arrange on the dough so that they cover the middle, all the way to the edges that need to stay free to swell and brown nicely.
  5. Bake in a preheated oven at 180 degrees for 20 minutes.
  6. Take out the pizza and sprinkle arugula, pieces of cottage cheese and drizzle with olive oil on the hot melted cheese. Grate a few truffle leaves on it.

Simple pasta

Given the purity and nobility of the taste of truffles, sometimes the dishes should not be complicated with the ingredients and preparation. For a quick lunch, we suggest a simple pasta in al burro butter seasoned with grated black truffles.

Like before, preparation of simple past is up to 30 min. It should also be enough for 4 servings and very easy to prepare.

You will need:

  • 300 g pasta with eggs
  • 1 piece of black truffle
  • 2 tablespoons butter
  • salt

Preparation

  1. Cook the pasta in salted water
  2. Melt the butter in a pan and mix it with the finished, well-drained pasta.
  3. Arrange the pasta in plates and grate fresh black truffles on top.
  4. Stir the truffle into the pasta just before eating.

Pasta with vegetables

Another variant of pasta with truffles, but with the addition of vegetables and prosciutto, also very quick to prepare. Saute vegetables such as eggplant, zucchini, peppers and broccoli in a little oil, drizzling with vegetable stock. Combine vegetables with cooked pasta and add pieces of prosciutto, grated parmesan and black truffle.

Like all dishes here, you will not need more than 30 minutes to prepare it, but this time it will be for 10 persons.

You will need:

  • 1000 g pasta penne
  • 100 g zucchini, green
  • 150 g pepperoni of different colors
  • 150 g eggplant
  • 100 g broccoli (flower tops)
  • 100 g lettuce, green
  • 50 g green peas
  • 20 g black truffle
  • 130 g prosciutto
  • 80 g olive oil
  • vegetable stock
  • 120 g parmesan cheese
  • salt and pepper

Preparation

  1. Clean, wash and cut all the vegetables.
  2. Add salt and simmer in a pan on oil with the addition of vegetable broth. Add salt and pepper.
  3. Cook the pasta and mix with the vegetables. Add the prosciutto and black truffle and stir.
  4. When serving, garnish with fresh basil.

Dessert with truffles: Motovun in the fog

So finally it is time for one simple desert prepared in less than half an hour. Motovun in the fog is actually an ice cream made of egg yolks and whipped sweet cream, which every truffle lover should definitely try.

You will need:

  • 8 pieces of chicken yolk (raw)
  • 2 g sugar, crystal
  • 60 g water
  • 20 g black truffle
  • 500 ml whipped cream (30% fat), sweet

Preparation

  1. Whisk the egg yolks, and simmer the sugar and water over low heat. Then add the cooked sugar to the egg yolks and mix. Grate the truffle into the mixture.
  2. Leave to cool and add half a liter of whipped sweet cream. Mix everything and freeze. Ice cream can be served with dry ice and warm water to get a characteristic “foggy” look.
